Crispy, spicy taquitos filled with shredded chicken, buffalo sauce, and cheese, perfect for game day or any finger-food party.

Ingredients

  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 8 small flour or corn tortillas
  • Cooking oil for frying
  • Blue cheese or ranch dressing for dipping

Instructions

  1. In a bowl, combine shredded chicken, buffalo sauce, and cheese. Stir until evenly coated.
  2. Spoon a small mound of filling onto the bottom third of each warmed tortilla.
  3. Roll the tortilla around the filling and secure with a toothpick if needed.
  4. Heat oil in a skillet over medium until shimmering.
  5. Add taquitos seam-side down to the hot oil, frying for 2-3 minutes until golden and crisp.
  6. Remove to a paper towel-lined plate to drain and rest for 1-2 minutes before serving.
  7. Serve with blue cheese or ranch dressing for dipping.

Notes

For baking, brush with oil and bake at 425°F (220°C) for 12-15 minutes for a lighter version.
