Cheesy Rotisserie Chicken Enchiladas

Delicious and easy-to-make enchiladas filled with shredded rotisserie chicken, cheese, and enchilada sauce, perfect for busy weeknights.

Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 corn or flour tortillas
  • 1 can (10 oz) enchilada sauce
  • 1 cup sour cream
  • 1/2 cup diced onions
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, thoroughly mix the shredded chicken, 1/2 cup of shredded cheese, diced onions, garlic powder, salt, and pepper.
  3. Spread a small amount of enchilada sauce on the bottom of a baking dish to prevent sticking.
  4. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the baking dish.
  5. Pour the remaining enchilada sauce over the filled tortillas and sprinkle with the rest of the cheese.
  6. Cover with foil and bake for 20 minutes.
  7. After 20 minutes, remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  8. Serve hot, accompanied by sour cream and garnish with chopped cilantro if desired.

Notes

For added flavor, sauté the onions in oil before mixing with the chicken. You can also add green chiles or jalapeños for extra spice.
