Ingredients

  • 2 boneless, skinless chicken breasts — cut into bite-sized pieces
  • 2 medium zucchinis — sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper, to taste


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly oil a large baking dish or line it with parchment for easier cleanup.
  2. Cut the chicken breasts into bite-sized pieces and slice the zucchinis into even rounds.
  3. Combine the chicken pieces and zucchini slices in a large bowl or directly in the baking dish.
  4. Drizzle with olive oil, then sprinkle with garlic powder, onion powder, Italian seasoning, salt, and pepper.
  5. Toss everything well to coat evenly, then spread into a single layer in the dish.
  6. Bake uncovered for about 25–30 minutes, stirring once halfway through.
  7. Serve warm right from the dish and enjoy.

Notes

For richer flavor, replace olive oil with avocado oil or melted butter. Add fresh garlic for extra flavor, reducing baking time slightly.
