Description

A vibrant, customizable weeknight meal featuring seasoned chicken, rice, beans, corn, and fresh toppings.


Ingredients

  • 2 cups cooked rice (white, brown, jasmine, or cauliflower)
  • 1 pound chicken breast, diced into bite-size pieces
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese
  • Sour cream (optional)
  • Lime wedges, for serving
  • Chopped cilantro, for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and sprinkle taco seasoning over the pieces. Stir to coat.
  3. Sauté until chicken is cooked through, about 5–7 minutes.
  4. Warm the black beans and corn if desired.
  5. Divide cooked rice among serving bowls.
  6. Top each bowl with seasoned chicken, black beans, corn, diced tomatoes, and avocado.
  7. Sprinkle cheese over the top and add sour cream if using.
  8. Garnish with cilantro and serve with lime wedges.

Notes

For a vegetarian version, substitute chicken with sautéed tofu or beans. Use rotisserie chicken to save time.
