Ingredients
- 2 tablespoons olive oil
- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 medium zucchinis, sliced into half-moons
- 1 red bell pepper, chopped
- 1 cup cherry tomatoes, halved
- 1 teaspoon Italian seasoning
- 1/4 cup grated Parmesan cheese (optional)
- Fresh basil for garnish (optional)
Instructions
- Heat 2 tablespoons olive oil in a large skillet over medium heat until shimmering.
- Add the chicken pieces in a single layer and sprinkle with garlic powder, onion powder, salt, and pepper.
- Cook the chicken 5–7 minutes, stirring occasionally, until browned and cooked through.
- Add sliced zucchini and chopped red bell pepper; sauté 4–5 minutes until tender but still crisp.
- Stir in halved cherry tomatoes and Italian seasoning; cook 2–3 minutes until tomatoes are warmed.
- Sprinkle Parmesan over the skillet if using and let it melt for about a minute.
- Remove from heat and garnish with fresh basil. Serve immediately.
Notes
To make this dish low-carb, serve over greens instead of rice or pasta. Use firm tofu for a vegetarian option.
