Description
A warm, tangy snack that combines mini bagels with creamy cottage cheese and fresh herbs, baked to perfection in just minutes.
Ingredients
- 8–12 mini bagels or 4 regular bagels, sliced in half
- 1 to 1 1/2 cups cottage cheese (low-fat or full-fat)
- 2–3 tablespoons finely chopped fresh herbs (chives, parsley, or dill)
- Optional toppings: halved cherry tomatoes, thinly sliced cucumber, sliced olives, capers, smoked salmon, or red pepper flakes
- Salt and freshly ground black pepper, to taste
- Olive oil, for drizzling (optional)
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment for easier cleanup.
- Arrange the bagel halves cut-side up on the prepared sheet, leaving a little space between each.
- Spoon and spread a generous layer of cottage cheese over each half (about 2–3 tbsp each). Smooth with the back of the spoon.
- Sprinkle the chopped fresh herbs evenly over the cottage cheese. Season with a pinch of salt and a grind of black pepper.
- Add optional toppings: place a slice of cherry tomato, a cucumber ribbon, or an olive slice on each bagel bite.
- Bake for 10–12 minutes, or until the bagel edges are lightly golden and the cheese is warmed.
- Remove from oven, let cool for 1–2 minutes, finish with a drizzle of olive oil or a few more fresh herbs, and serve warm.
Notes
For a creamier spread, blend cottage cheese briefly until smooth. Use a microplane or fork to loosen cottage cheese if very lumpy.
