Cottage cheese chaffles are a quick low-carb breakfast option that are versatile enough for any meal. Crispy on the outside and soft on the inside, they’re perfect for savory or sweet toppings.
Ingredients
- 1 cup full-fat cottage cheese (226 g)
- 2 large eggs
- 1/2 cup shredded cheddar or mozzarella (50 g)
- 2 tbsp almond flour (optional)
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp garlic powder (optional)
- 1/4 tsp onion powder (optional)
- 1 tbsp melted butter or olive oil (optional)
- 1–2 tsp sweetener (erythritol/stevia) or 1 tsp vanilla extract
- Non-stick spray or extra melted butter for greasing
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- Whisk the eggs in a bowl until frothy, then add the cottage cheese and combine.
- Stir in the shredded cheese, almond flour, baking powder, salt, and any spices or sweeteners.
- Grease the waffle iron with non-stick spray or melted butter.
- Spoon enough batter onto the iron to cover the surface without overflowing.
- Close the lid and cook for 3–5 minutes until golden-brown.
- Remove the chaffle with a spatula and repeat with remaining batter.
- Serve warm for the crispiest texture.
Notes
For best texture, use room-temperature eggs and don’t overfill the waffle iron. Let cooked chaffles rest on a wire rack to avoid sogginess.
