Ingredients
- 1 lb chicken breast or thighs, cut into 1-inch cubes
- 1 cup cottage cheese
- 1/3 cup grated Parmesan cheese
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1 tablespoon oil
- Salt, to taste
Instructions
- Pat the chicken dry with paper towels; season evenly with salt, paprika, and black pepper.
- Heat the oil in a large skillet over medium until it shimmers.
- Add the chicken in a single layer. Let it cook undisturbed until golden brown, about 3–4 minutes.
- Flip the pieces and continue cooking until lightly golden and chicken is nearly cooked through, another 3–4 minutes.
- Reduce the heat to low.
- Gently stir in the cottage cheese, warming it through and coating the chicken.
- Gradually sprinkle in the Parmesan, stirring until it melts into a creamy sauce.
- Taste and adjust seasoning with salt and pepper.
- Remove from heat and let rest for 1 minute before serving.
Notes
For creaminess, use full-fat cottage cheese. Adjust spice levels by adding crushed red pepper.
