Description
Delicious creamy garlic chicken thighs with a rich garlic-Parmesan sauce, perfect for busy weeknights or elegant dinners.
Ingredients
- 8 bone-in, skin-on chicken thighs (about 2 lbs)
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 2 tbsp unsalted butter
- 6 cloves garlic, minced
- 1/2 cup low sodium chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Prep and season the chicken: Pat the chicken thighs completely dry with paper towels and season all over with salt, black pepper, and garlic powder.
- Sear the thighs: Heat olive oil in a large skillet over medium-high heat. Place the thighs skin-side down and sear for 6–8 minutes until the skin is golden brown. Flip and cook another 5–6 minutes until cooked through. Remove and set aside.
- Build the base of the sauce: Reduce heat to medium, add butter, and once melted, add minced garlic and cook until fragrant, about 30 seconds.
- Deglaze and reduce: Pour in chicken broth, scraping up browned bits. Bring to a simmer and reduce for 3–4 minutes.
- Make the creamy sauce: Stir in heavy cream and simmer for 2–3 minutes until slightly thickened. Reduce heat and stir in Parmesan until melted and smooth.
- Return chicken and serve: Place chicken thighs back in the skillet, spoon sauce over them, and simmer a minute to marry flavors. Garnish with parsley.
Notes
For a lighter sauce, consider using half-and-half instead of heavy cream. Serve over mashed potatoes or pasta to soak up the sauce.
