Ingredients

  • 8 oz pasta (such as penne or fettuccine)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Olive oil
  • Salt and pepper to taste
  • 1 rotisserie chicken, shredded
  • Fresh parsley, chopped (for garnish)
  • Optional: vegetables (e.g., spinach, bell peppers, or broccoli)


Instructions

  1. Cook the pasta in a large pot of salted water according to package instructions until al dente. Reserve about 1/2 cup of the pasta cooking water before draining.
  2. Sauté the garlic in olive oil over medium heat until fragrant, about 1–2 minutes.
  3. Stir in the shredded rotisserie chicken and cook until heated through.
  4. Pour in the heavy cream and bring to a gentle simmer. Reduce slightly for 2–3 minutes.
  5. Add the grated Parmesan cheese, stirring until melted and creamy. Season with salt and pepper.
  6. Combine the cooked pasta with the sauce and toss to coat. Add any additional vegetables if using.

Notes

For a lighter option, substitute half of the heavy cream with half-and-half. To store, refrigerate in an airtight container for 3–4 days.
