Description
A quick and comforting skillet dinner featuring chicken breasts in a silky cream sauce with sun-dried tomatoes and spinach.
Ingredients
- 4 boneless, skinless chicken breasts (about 1.25–1.5 lb total)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup fresh spinach
- ½ cup sun-dried tomatoes
- 1 teaspoon Italian seasoning
- Salt and freshly ground black pepper, to taste
- Parmesan cheese, for topping
Instructions
- Pat the chicken dry and season both sides generously with salt and pepper.
- Heat a large skillet over medium heat and add the olive oil. When hot, sear the breasts 6–7 minutes per side until golden.
- Transfer to a plate and set aside to rest.
- In the same skillet, reduce heat slightly and add the minced garlic. Sauté for 30–60 seconds until fragrant.
- Add the sun-dried tomatoes and spinach. Stir until the spinach wilts.
- Pour in the heavy cream and sprinkle in the Italian seasoning. Stir and bring to a gentle simmer for 2–3 minutes.
- Return the chicken to the skillet, spooning sauce over it. Simmer for 2–3 minutes to heat through.
- Turn off the heat and grate Parmesan over the top before serving.
Notes
Serve over pasta or with a side of risotto for a complete meal. Can be refrigerated for 3-4 days.
