Crispy Chicken Taquitos are a delicious blend of flavor and texture, featuring crunchy tortillas filled with a creamy, savory chicken mixture, perfect for any meal.

  • 2 cups cooked shredded chicken
  • 4 oz cream cheese, softened
  • ½ cup shredded cheese (cheddar or Mexican blend)
  • ¼ cup salsa
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • ½ tsp cumin
  • Salt and black pepper to taste
  • 8 small flour or corn tortillas
  • Cooking spray or oil for brushing
  • Chopped cilantro for garnish (optional)
  • Sour cream and guacamole for serving

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a bowl, combine the shredded chicken, cream cheese, shredded cheese, salsa, garlic powder, chili powder, cumin, salt, and pepper. Mix well until everything is properly combined.
  3. Warm the tortillas in the microwave for about 20 seconds to make them easier to roll.
  4. Spoon 2-3 tablespoons of the filling onto one side of each tortilla and roll tightly, tucking in the ends as you go.
  5. Place seam-side down on the baking sheet and lightly brush with oil or cooking spray.
  6. Bake for 15-20 minutes or until golden brown and crispy. For an extra crunch, broil for 1-2 minutes at the end.
  7. Serve warm with sour cream, guacamole, or your favorite toppings.

Feel free to substitute the chicken with leftover turkey or switch up the cheese for a different flavor profile.
