  • 1 cup dill pickle juice (for marinating)
  • 1 cup seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, whisked
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Cooking oil, for frying

Instructions

  1. Marinate the Chicken: Place the chicken breasts in a dish or zip-top bag and cover them with dill pickle juice. Allow them to marinate in the fridge for 30 minutes to 2 hours.
  2. Prep the Coating Stations: Set up three shallow dishes. In the first, combine flour, garlic powder, onion powder, paprika, salt, and pepper. The second dish is for the whisked eggs, and the third blends Parmesan cheese with seasoned breadcrumbs.
  3. Coat the Chicken: Remove the marinated chicken from the fridge, pat it dry, and dredge it in the flour mixture. Then dip each piece into the egg and press it into the breadcrumb-Parmesan mix for even coverage.
  4. Heat the Oil: In a skillet, heat about 1/2 inch of cooking oil over medium-high heat until shimmering.
  5. Fry the Chicken: Carefully add the coated chicken to the hot oil, frying for about 5-7 minutes on each side until golden brown and the internal temperature reaches 165°F.
  6. Drain: Once cooked, transfer the chicken to a wire rack to drain any excess oil before serving. Let it rest for a few minutes to maintain juiciness.
