Delicious and easy-to-make tostadas featuring rotisserie chicken, perfect for busy weeknights or casual gatherings.
Ingredients
- 4 tostada shells
- 2 cups rotisserie chicken, shredded
- 1 cup refried beans
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- 1/4 cup salsa
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Arrange the tostada shells on a baking sheet.
- Brush each tostada shell lightly with olive oil, then sprinkle with salt.
- Bake in the oven for about 5-7 minutes until crispy and lightly golden.
- In a bowl, mix the shredded rotisserie chicken with some salsa, adding salt and pepper to taste.
- Spread a generous layer of refried beans on each tostada shell.
- Top with the chicken mixture, followed by shredded lettuce, diced tomatoes, and a sprinkle of cheese.
- Return the tostadas to the oven for an additional 5 minutes or until the cheese is melted and bubbly.
- Serve hot with sour cream on the side.
Notes
For a vegetarian version, substitute chicken with sautéed mushrooms or grilled vegetables. You can customize toppings as desired.
