Description

Effortless slow-cooker BBQ chicken that yields tender, shreddable meat perfect for sandwiches or salads.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1.52 lbs)
  • 1 cup barbecue sauce
  • 1/2 cup chicken broth
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • Salt and pepper to taste


Instructions

  1. Place the chicken breasts in a single layer at the bottom of the crockpot.
  2. In a bowl, whisk together the barbecue sauce, chicken broth, garlic powder, onion powder, and a pinch of salt and pepper until smooth.
  3. Pour the sauce evenly over the chicken, making sure each piece is coated.
  4. Cover and cook on low for 6–8 hours, or high for 3–4 hours. The chicken is done when it easily shreds and registers at least 165°F (74°C).
  5. Shred the chicken in the crockpot using two forks. Stir the meat into the sauce to soak up the juices.
  6. Taste and adjust seasoning. If the sauce is too thin, cook on high for 20–30 minutes with the lid off to reduce and thicken.

Notes

For more depth, add 2 teaspoons smoked paprika or 1 teaspoon chili powder. If using bone-in chicken, adjust cooking time as needed.
