Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1 teaspoon ground ginger
- Salt and pepper to taste
- Cooked rice or vegetables for serving
Instructions
- Combine the honey, soy sauce, minced garlic, rice vinegar, ground ginger, and salt and pepper in a mixing bowl.
- Place the chicken breasts in the crockpot in a single layer.
- Pour the honey garlic mixture over the chicken, ensuring it’s well-coated.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours until the chicken is tender.
- Shred the chicken with two forks and mix it back into the sauce.
- Serve hot over rice or alongside your favorite vegetables.
Notes
For a thicker sauce, remove the shredded chicken and simmer the sauce briefly on the stove. Use fresh or frozen ginger as desired.
