Description

A creamy, comforting dish featuring tender chicken in a rich Parmesan sauce with sun-dried tomatoes and fresh basil, perfect for weeknight dinners or dinner parties.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped


Instructions

  1. Prep the chicken: Pat the chicken breasts dry and sprinkle the seasoning mixture over both sides, rubbing it in evenly.
  2. Layer in the slow cooker: Place the seasoned chicken breasts in a single layer at the bottom of a 6-quart slow cooker.
  3. Add aromatics and tomatoes: Top the chicken with minced garlic and chopped sun-dried tomatoes.
  4. Pour the chicken broth around the chicken and cook: Cover and cook on LOW for 3-4 hours or HIGH for 2-3 hours.
  5. Shred the chicken: Use two forks to shred the chicken in the crockpot, then stir in heavy cream and grated Parmesan cheese until smooth.
  6. Finish and serve: Stir in the chopped fresh basil, let it sit for 5-10 minutes, then serve hot.

Notes

For a lighter sauce, substitute half-and-half for heavy cream. This dish can also be made with boneless, skinless chicken thighs for a juicier result.
