Description

A fast and indulgent creamy chicken dish with garlic and mushrooms, perfect for busy weeknights.


Ingredients

  • 2 boneless, skinless chicken breasts (about 68 oz each), pounded slightly if uneven
  • 2 cups mushrooms, sliced (cremini or button)
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish


Instructions

  1. Heat a large skillet over medium heat and add olive oil. Let it shimmer.
  2. Pat chicken dry, season with salt and pepper, and add to the pan. Cook until golden, about 6–7 minutes per side. Remove chicken and set aside.
  3. Add sliced mushrooms to the same skillet and sauté until browned, about 5 minutes.
  4. Add minced garlic and cook for 30–60 seconds until fragrant.
  5. Pour in heavy cream and simmer for 2–3 minutes until slightly thickened. Adjust seasoning.
  6. Return chicken to the pan, spooning sauce over. Cook for another minute to reheat and marry flavors.
  7. Garnish with parsley and serve immediately.

Notes

For more flavor, use a mix of cremini and shiitake mushrooms. This dish pairs well with buttered egg noodles or roasted cauliflower.
