A comforting and filling chili recipe that comes together effortlessly in just one pot, perfect for busy weeknights and gatherings.

Ingredients

  • 1 lb ground beef or turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 cups beef or vegetable broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef or turkey over medium heat until fully cooked. Drain excess fat.
  2. Add the diced onion and minced garlic to the pot, sautéing until the onion becomes translucent.
  3. Stir in the kidney beans, black beans, diced tomatoes, and broth.
  4. Add chili powder, cumin, salt, and pepper, mixing to combine all the ingredients.
  5. Bring the mixture to a simmer, then reduce the heat to low.
  6. Cover and let it cook for about 30 minutes, stirring occasionally.
  7. Taste and adjust the seasoning as necessary.
  8. Serve hot, topped with your favorite ingredients!

Notes

For added flavor, use a cast iron pot. Chili stores well and tastes better the next day.
