Description
Tender chicken breasts stuffed with bright, herby pesto and melting mozzarella, seared for color and baked for perfection.
Ingredients
- 2 large chicken breasts
- 1/2 cup pesto
- 1/2 cup shredded mozzarella cheese
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- Butterfly the chicken breasts by slicing them horizontally to create pockets.
- Season both sides of the chicken with salt and pepper. Stuff each pocket with 1/4 cup pesto and 1/4 cup shredded mozzarella.
- Sear the chicken in a skillet for 3–4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for 20–25 minutes until cooked through.
- Let the chicken rest for a few minutes, then slice and serve.
Notes
Use a sharp knife for even cuts and remember to let the chicken rest before slicing to keep it juicy.
