Easy Soy Garlic Chicken Thighs

A quick and delicious chicken dish featuring tender thighs coated in a sticky soy garlic glaze, perfect for weeknight dinners.

  • 1 lb boneless, skinless chicken thighs
  • 3 tbsp potato starch
  • 3 tbsp all-purpose flour
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp neutral oil
  • 8 cloves garlic (minced)
  • 2 stalks green onion (green and white parts separated)
  • 1 tsp red chili flakes
  • 1/2 cup chicken stock
  • 3 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp dark soy sauce
  • 1 tsp cornstarch
  • Green onion greens (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Pat the chicken thighs dry with a paper towel.
  2. On a plate, mix potato starch, flour, garlic powder, salt, and pepper. Coat each chicken thigh in this mixture.
  3. Heat neutral oil in a large frying pan over medium-high heat. Cook the coated chicken thighs until golden brown on both sides, about 7 minutes each side, then set aside.
  4. Add minced garlic, white parts of green onion, and red chili flakes to the same pan. Sauté for about 3 minutes until garlic is golden.
  5. Pour in chicken stock, honey, rice vinegar, soy sauce, and cornstarch. Cook for 1 minute until slightly thickened.
  6. Return the chicken to the pan, coat well in the sauce, and cook for another 5 minutes until fully cooked through.
  7. Serve hot, garnished with green onion greens and sesame seeds.

Notes

For the crispiest thighs, ensure they are dried before coating. Marinate for extra flavor if desired.
