A comforting dish combining tender chicken with creamy potatoes, perfect for busy weeknights and family gatherings.

Ingredients

  • 1.5 lbs boneless chicken breast or thighs, cubed
  • 2 tbsp garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Paprika to taste
  • Parsley, for garnish
  • 3 medium red or Yukon potatoes, diced
  • 1/2 cup plain Greek yogurt or light sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp dried herbs (thyme or parsley)
  • Additional salt and pepper to taste

Instructions

  1. Boil the diced potatoes in salted water until tender, about 10–12 minutes. Drain and let them cool slightly.
  2. In a bowl, combine Greek yogurt, Dijon mustard, dried herbs, garlic powder, and seasoning. Fold in the cooked potatoes until well-coated.
  3. Heat olive oil in a skillet over medium heat. Season the cubed chicken with salt, pepper, and paprika. Add it to the skillet and cook until golden and fully cooked through, about 6-8 minutes.
  4. Lower the heat, stir in minced garlic and butter. Cook for an additional 1–2 minutes until garlic is fragrant.
  5. Divide the chicken and creamy potatoes into meal prep containers, garnishing with parsley if desired.

Notes

Can be customized with different herbs, or by adding veggies to the creamy potato mixture.
