A comforting slow-cooked chicken dish with tender chicken, hearty potatoes, and carrots, all in a luscious garlic butter sauce.

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1/2 cup chicken broth

Instructions

  1. Prep the ingredients: Toss the chicken, potatoes, and carrots into your slow cooker.
  2. Mix the garlic butter sauce: In a bowl, combine the melted butter, minced garlic, Italian seasoning, salt, pepper, and chicken broth until well mixed.
  3. Pour and coat: Pour the garlic butter mixture over the chicken and veggies, then stir gently to coat everything.
  4. Set it and forget it: Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until the chicken is cooked through and tender.
  5. Finish and serve: Garnish with fresh parsley before serving. Enjoy!
