Description
Quick, healthy garlic chicken with broccoli and spinach, perfect for weeknight meals.
Ingredients
- 2 boneless, skinless chicken breasts (about 1 to 1¼ lb total)
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste
- 4 cloves garlic, minced (about 1½ teaspoons)
- 2 cups broccoli florets (fresh; frozen can work)
- 2 cups fresh spinach, packed
- 1 tablespoon soy sauce (optional)
Instructions
- Heat a large skillet over medium heat. Add the olive oil and let it shimmer but not smoke.
- Season both sides of the chicken breasts with salt and pepper. Place them in the hot skillet.
- Sear the chicken 6–7 minutes per side, until golden and the internal temperature reaches 165°F (74°C).
- Remove chicken from the skillet and set aside to rest.
- Reduce heat to medium-low. Add the minced garlic to the same skillet and sauté for about 1 minute until fragrant.
- Add the broccoli florets. Cook 3–4 minutes, stirring occasionally, until slightly tender.
- Toss in the fresh spinach and cook until just wilted, about 1–2 minutes.
- Slice the rested chicken against the grain and return to the skillet with the vegetables.
- Drizzle the soy sauce over everything and toss gently to combine. Taste and adjust salt and pepper.
- Serve warm.
Notes
For a lighter meal, omit soy sauce and serve with a squeeze of lemon.
