Description

This quick skillet dinner features pan-seared chicken in a rich garlic-Parmesan sauce, perfect for busy weeknights.


Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons extra virgin olive oil (divided)
  • 4 tablespoons unsalted butter (divided)
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1 cup grated Parmesan cheese (plus extra for serving)
  • 1 teaspoon dried Italian herbs
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley, for garnish


Instructions

  1. Pat the chicken pieces dry with paper towels; season evenly with salt and black pepper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  3. Add chicken in a single layer and sear for 3–4 minutes per side until golden and cooked through.
  4. Remove chicken to a plate and tent loosely with foil.
  5. Reduce heat to medium and add remaining olive oil and butter to the skillet.
  6. Add minced garlic and sauté for 1–2 minutes until fragrant.
  7. Pour in heavy cream and chicken broth; bring to a simmer.
  8. Stir in Parmesan, remaining butter, dried herbs, and red pepper flakes.
  9. Return the chicken to the skillet and simmer for 2–3 minutes.
  10. Garnish with parsley and serve immediately.

Notes

Dry the chicken well before searing for best browning. For a brighter sauce, add lemon juice just before serving.
