This Hawaiian Chicken Sheet Pan features juicy chicken breasts, sweet pineapple, and caramelized bell peppers, all roasted together for a simple, flavorful weeknight dinner.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1/2 cup teriyaki sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine chicken with pineapple, bell pepper, onion, teriyaki sauce, olive oil, salt, and pepper in a large bowl.
  3. Spread the mixture evenly on a rimmed sheet pan.
  4. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C).
  5. Let the chicken rest for a few minutes before serving over rice.

Notes
