Description

A quick and easy sheet pan dinner featuring caramelized soy-honey chicken thighs, pineapple, and colorful vegetables.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup pineapple chunks
  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Cooked rice or mixed greens (for serving)


Instructions

  1. Preheat your oven to 400°F (200°C). Line a large sheet pan with foil or parchment for easier cleanup.
  2. Whisk together soy sauce, honey, olive oil, minced garlic, salt, and pepper. Add chicken thighs and toss to coat.
  3. Transfer the marinated chicken to the lined sheet pan, spacing the thighs apart. Scatter the pineapple, bell pepper, and red onion around the chicken.
  4. Roast in the preheated oven for 25–30 minutes until the chicken is cooked through and the vegetables are tender.
  5. Let the pan cool for 3–5 minutes before serving hot over rice or greens.

Notes

Pat the chicken dry before marinating for better glaze adherence. Adjust the salt slowly since soy sauce is salty.
