Description

A warm pot of homemade chicken and dumplings featuring shredded chicken, savory broth, and fluffy drop dumplings — the ultimate comfort food.


Ingredients

  • 1 pound chicken (breast or thighs)
  • 2 cups chicken broth (preferably low-sodium)
  • 1 cup milk (whole or 2%)
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt (plus more to taste)
  • ½ cup butter, melted
  • 1 cup mixed vegetables (peas, carrots, and corn)


Instructions

  1. Place the chicken and 2 cups of chicken broth in a large pot.
  2. Bring to a gentle boil, then reduce heat and simmer until the chicken is cooked through (about 12–15 minutes for breasts; 18–22 minutes for thighs).
  3. Remove the chicken to a plate, let it cool a few minutes, then shred with two forks.
  4. Add the mixed vegetables to the pot with the reserved broth and simmer for 3–5 minutes.
  5. Whisk together the flour, baking powder, and salt in a bowl.
  6. Stir in the melted butter and pour in the milk until just combined.
  7. Drop tablespoon-sized mounds of batter into the simmering broth.
  8. Cook the dumplings for about 15 minutes, keeping the pot covered.
  9. Stir the shredded chicken back into the pot and warm through for 2–3 minutes.
  10. Taste and adjust seasoning before serving.

Notes

Best served with a crusty piece of bread or biscuits. For leftovers, store in an airtight container for up to 3–4 days.
