Ingredients
- 2 cups cooked chicken, shredded (rotisserie, poached, or leftover roast)
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 1/2 cup Greek yogurt (or mayonnaise)
- 1 cup celery, finely chopped
- 1/2 cup red onion, finely chopped
- 1/2 cup walnuts or pecans, chopped (optional)
- Salt and pepper to taste
- Lettuce leaves or sandwich bread for serving
Instructions
- In a large bowl, whisk together honey, Dijon mustard, and Greek yogurt until smooth and glossy.
- Add the shredded cooked chicken to the bowl.
- Fold in the chopped celery and red onion until evenly combined.
- If using, stir in the chopped walnuts or pecans and season with salt and pepper to taste.
- Chill for at least 10-15 minutes to let the flavors meld.
- Serve chilled on lettuce leaves or as a sandwich filling.
Notes
For a creamier texture, use full-fat Greek yogurt. If making dairy-free, swap yogurt with plant-based mayo.
