Description

A quick and satisfying chicken salad made with honey, Dijon mustard, and Greek yogurt, perfect for sandwiches or as a light meal on lettuce.


Ingredients

  • 2 cups cooked chicken, shredded (rotisserie, poached, or leftover roast)
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1/2 cup Greek yogurt (or mayonnaise)
  • 1 cup celery, finely chopped
  • 1/2 cup red onion, finely chopped
  • 1/2 cup walnuts or pecans, chopped (optional)
  • Salt and pepper to taste
  • Lettuce leaves or sandwich bread for serving


Instructions

  1. In a large bowl, whisk together honey, Dijon mustard, and Greek yogurt until smooth and glossy.
  2. Add the shredded cooked chicken to the bowl.
  3. Fold in the chopped celery and red onion until evenly combined.
  4. If using, stir in the chopped walnuts or pecans and season with salt and pepper to taste.
  5. Chill for at least 10-15 minutes to let the flavors meld.
  6. Serve chilled on lettuce leaves or as a sandwich filling.

Notes

For a creamier texture, use full-fat Greek yogurt. If making dairy-free, swap yogurt with plant-based mayo.
