Description

A classic comfort food featuring a flaky crust filled with creamy chicken and vegetables.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 package refrigerated pie crusts (2 crusts)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Melt the butter in a large saucepan over medium heat.
  3. Stir in the flour, salt, and pepper to form a smooth paste.
  4. Gradually whisk in the chicken broth and milk, stirring constantly.
  5. Add the chicken, carrots, peas, and potatoes to the sauce, stirring until well coated.
  6. Roll out one pie crust and place it in a pie dish.
  7. Pour the chicken mixture into the crust, smoothing the top.
  8. Cover with the top crust, seal the edges, and cut slits in the top.
  9. Bake for 30-35 minutes, or until the crust is golden brown.
  10. Let the pie rest for 10-15 minutes before slicing.

Notes

Allow the pie to rest for better slice presentation. For a shiny crust, brush with milk before baking.
