Description

A delicious one-pan meal featuring tender chicken in a sweet and tangy BBQ sauce, served over fluffy rice and vibrant vegetables, perfect for weeknight dinners.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste


Instructions

  1. In a large skillet over medium heat, season the chicken with salt, pepper, garlic powder, onion powder, and smoked paprika. Sear the chicken for about 5 minutes per side until it’s nicely browned.
  2. While the chicken cooks, whisk together the BBQ sauce and honey in a separate bowl.
  3. Pour the BBQ-honey mixture over the chicken, making sure it’s completely coated.
  4. Add the rice and chicken broth to the skillet, stir gently to combine.
  5. Bring to a simmer, cover, and cook on low heat for about 20 minutes until the rice is tender and has absorbed all flavors.
  6. During the last 5 minutes of cooking, sprinkle mixed vegetables on top to steam lightly.
  7. Let sit for 5 minutes before fluffing the rice with a fork. Serve warm and enjoy!

Notes

For a variation, try substituting the BBQ sauce with teriyaki sauce or adding sriracha for a spicy kick. This dish can be made vegetarian by using chickpeas or tofu.
