A quick and delicious one-pan meal featuring teriyaki chicken and mixed vegetables, ideal for busy weeknights.

  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas, etc.)
  • 1/4 cup teriyaki sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the minced garlic and ginger, sautéing for an additional minute until fragrant.
  4. Toss in the mixed vegetables and cook for 3-5 minutes until they are tender yet crisp.
  5. Pour the teriyaki sauce over the chicken and vegetables, mixing well to coat everything evenly.
  6. Season with salt and pepper to taste.
  7. Serve your stir fry over cooked rice or noodles, and enjoy!

Notes

For extra flavor, marinate the chicken in teriyaki sauce for an hour before cooking. Don’t overload the pan for better searing.
