A comforting yet elegant dish featuring tender chicken under a crispy Parmesan coating, smothered in a rich creamy garlic sauce.
Ingredients
- 4 thin chicken cutlets
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- Salt & pepper to taste
- 2 tbsp olive oil (for frying)
- 2 tbsp butter
- 3 garlic cloves, minced
- ½ cup chicken broth
- 1 cup heavy cream
- ¼ cup grated Parmesan (for sauce)
- Fresh parsley or thyme for garnish
Instructions
- Season the chicken cutlets on both sides with salt and pepper. Set up a dredging station with flour, beaten eggs, and a mix of breadcrumbs and Parmesan.
- Coat each cutlet in flour, shake off excess, dip in eggs, then press into breadcrumbs to coat evenly.
- Heat olive oil in a skillet over medium heat. Fry cutlets for 3–4 minutes per side until golden brown. Remove and set aside.
- Add butter to the same skillet and melt. Sauté minced garlic until fragrant, about 30 seconds.
- Pour in chicken broth, add heavy cream and Parmesan. Simmer until thickened, stirring occasionally.
- Return the fried chicken to the skillet, spoon sauce over cutlets, and warm together. Garnish with fresh herbs before serving.
Notes
For a healthier option, use half-and-half instead of heavy cream. Substitute gluten-free alternatives for flour and breadcrumbs.
