Description

A comforting baked spaghetti casserole with shredded chicken, creamy mushroom sauce, and melted cheese that’s perfect for weeknight dinners or potlucks.


Ingredients

  • 8 oz. spaghetti
  • 2 cups cooked chicken, shredded
  • 2 cups chicken broth
  • 1 can (10.5 oz.) cream of mushroom soup
  • 1 cup diced tomatoes with green chilies
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1/2 cup chopped onion
  • 1/2 cup bell pepper, chopped
  • 2 tablespoons olive oil
  • 1/2 cup grated cheddar cheese
  • 1/2 cup grated mozzarella cheese


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente. Drain and set aside.
  3. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the chopped onion and bell pepper and sauté until soft and translucent, about 5 minutes.
  4. In a large mixing bowl, combine the cooked spaghetti, shredded chicken, chicken broth, cream of mushroom soup, diced tomatoes with green chilies, sautéed onion and bell pepper, 1/4 teaspoon garlic powder, salt, and pepper. Mix well.
  5. Transfer the mixture into the greased baking dish and spread evenly. Sprinkle the grated cheddar and mozzarella cheese on top.
  6. Bake for 25 minutes, or until the cheese is bubbly and golden brown. Let cool before serving.

Notes

Easily customizable with different vegetables or spice levels. Can prepare ahead and refrigerate before baking.
