A warm, comforting casserole featuring rotisserie chicken, creamy soup, rice or pasta, and a cheesy topping.

Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup cooked rice or pasta
  • 1 can cream of chicken soup
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup broccoli florets (optional)
  • 1/2 cup milk
  • Salt and pepper to taste
  • Breadcrumbs for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded rotisserie chicken, cooked rice or pasta, cream of chicken soup, shredded cheese, broccoli (if using), milk, and season with salt and pepper. Mix until everything is well incorporated.
  3. Pour the mixture into a greased casserole dish, spreading it evenly.
  4. For a crunchy topping, sprinkle breadcrumbs over the surface.
  5. Bake for 25-30 minutes, or until the casserole is heated through and the cheese is bubbling.
  6. Serve warm and enjoy!

Notes

You can prep the casserole in advance and store it in the fridge before baking. Add extra baking time if it’s cold from the fridge.
