Description

A cozy and creamy rotisserie chicken mushroom soup enriched with two kinds of broth, tender chicken, and earthy mushrooms.


Ingredients

  • 4 cups chicken stock
  • 2 cups chicken bone broth
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 2 cups rotisserie chicken, shredded
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Sauté onion and garlic in olive oil until translucent (about 4–6 minutes).
  2. Add sliced mushrooms and cook until tender (about 5–7 minutes).
  3. Pour in chicken stock and bone broth; simmer gently.
  4. Mix in shredded rotisserie chicken; simmer for 10 minutes.
  5. Add heavy cream and stir until smooth; do not boil.
  6. Season with salt and pepper; serve hot garnished with parsley.

Notes

For a healthier option, replace heavy cream with half-and-half or coconut milk. Store in an airtight container for up to 3–4 days.
