Ingredients
- 1 rotisserie chicken, shredded
- 2 cups frozen mixed vegetables (peas, carrots, corn)
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups biscuit dough (homemade or store-bought)
Instructions
- Preheat your oven to 375°F (190°C). Grease a casserole dish.
- Combine the shredded rotisserie chicken, frozen mixed vegetables, cream of chicken soup, and chicken broth in a large mixing bowl.
- Season with garlic powder, onion powder, dried thyme, salt, and black pepper. Stir thoroughly.
- Pour the chicken and vegetable mixture into your greased casserole dish and spread it into an even layer.
- Drop spoonfuls of biscuit dough evenly over the top of the filling.
- Bake in your preheated oven for 25 to 30 minutes, or until the biscuit topping is golden brown and the filling is bubbly.
- Let it cool for a few minutes before serving.
Notes
This dish is easy to assemble and can be made ahead of time. Optionally, brush biscuit tops with melted butter before baking for extra flavor.
