Description
A creamy and cheesy casserole made with tender rotisserie chicken and zucchini, topped with cheddar and breadcrumbs for a crunchy finish.
Ingredients
- 1 rotisserie chicken, shredded
- 2 medium zucchinis, sliced
- 1 cup cream of mushroom soup
- 1/2 cup milk
- Salt and pepper to taste
- 1 cup cheddar cheese, shredded
- 1 cup breadcrumbs
- Olive oil for greasing
Instructions
- Preheat your oven to 350°F (175°C). Grease a casserole dish with a light coating of olive oil.
- Combine the shredded rotisserie chicken, sliced zucchinis, cheddar cheese, cream of mushroom soup, milk, salt, and pepper in a large bowl. Stir until well mixed.
- Pour the chicken and zucchini mixture into the prepared casserole dish, spreading it out evenly.
- Sprinkle the breadcrumbs generously over the top of the casserole.
- Bake for about 25–30 minutes, or until the top is golden and bubbly.
- Allow the casserole to cool for a few minutes before serving.
Notes
For best results, use freshly shredded cheese and adjust salt to taste. Leftovers reheat well in the oven or microwave.
