Description

A quick and easy shrimp dish with the flavors of an egg roll, made in one skillet in under 20 minutes.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups coleslaw mix (cabbage and carrots)
  • 1 bell pepper, diced
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • 2 teaspoons sesame seeds (optional)


Instructions

  1. Heat the skillet: In a large skillet, heat the sesame oil over medium heat until it shimmers.
  2. Add garlic and ginger: Add the minced garlic and ginger to the skillet and sauté for about 1 minute until fragrant.
  3. Cook the shrimp: Add the shrimp and cook until pink and opaque, about 2–3 minutes.
  4. Add vegetables: Stir in the coleslaw mix and diced bell pepper, cooking until vegetables are just tender, about 2–4 minutes.
  5. Flavor it up: Add the soy sauce, salt, and pepper to taste, mixing well.
  6. Remove from heat and serve: Garnish with sliced green onions and sesame seeds if using.

Notes

Shrimp can be swapped for firm tofu for a vegetarian version. Serve over rice or cauliflower rice for a low-carb option.
