Description
A delicious blend of spicy, sweet, and buttery flavors, this pasta dish is perfect for a quick weeknight meal.
Ingredients
- 8 oz fettuccine (or your favorite pasta)
- 1 tbsp olive oil
- 1 lb boneless skinless chicken breasts, diced
- 2 tbsp Cajun seasoning
- Salt and pepper, to taste
- 1/4 cup (4 tbsp) unsalted butter
- 2 cloves garlic, minced
- 2 tbsp honey
- 1/2 cup heavy cream
- Fresh parsley, chopped (optional garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook the fettuccine until al dente per package instructions. Reserve 1/2 cup of pasta water, then drain and set pasta aside.
- Pat the diced chicken dry and season evenly with Cajun seasoning, plus salt and pepper.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook without crowding, about 6–8 minutes, until golden and cooked through. Remove chicken to a plate.
- Lower heat to medium. Add the 1/4 cup butter to the skillet and let it melt. Stir in the minced garlic and sauté for ~30 seconds until fragrant.
- Stir in the honey and let it simmer gently for 1 minute.
- Pour in the heavy cream and whisk until smooth. Let the sauce bubble gently and thicken slightly for 2–3 minutes.
- Return the cooked chicken to the skillet and toss to coat in the sauce.
- Add the drained pasta and toss everything together until well coated, adding reserved pasta water as needed.
- Taste and adjust seasoning. Garnish with chopped parsley and serve hot.
Notes
Best served immediately, but leftovers can be stored in an airtight container for 3–4 days.
