  • 4 pieces boneless skinless chicken breasts or thighs
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth (low-sodium recommended)
  • 2 tablespoons honey
  • 1 teaspoon paprika
  • Salt and cracked black pepper, to taste
  • 1 cup caramelized onions
  • 1 cup shredded cheddar or Monterey Jack cheese (optional)
  • 2 tablespoons dried parsley (for garnish)
  • 1 teaspoon cayenne pepper or hot sauce
  • 1/2 cup heavy cream
  • 1 cup cherry tomatoes
  • 1/2 cup kalamata olives

Instructions

  1. In a large skillet, heat the butter over medium heat until melted.
  2. Stir in the minced garlic and sauté until fragrant, about 1 minute.
  3. Season the chicken with salt, pepper, and paprika. Add it to the skillet and cook until golden brown on both sides.
  4. Pour in the chicken broth, honey, and heavy cream; bring everything to a simmer.
  5. Add the caramelized onions and cherry tomatoes, and let it cook for about 10-12 minutes until the chicken is done and the sauce begins to thicken.
  6. If desired, sprinkle in the shredded cheese and cayenne pepper or hot sauce, stirring to combine evenly.
  7. Finally, garnish with dried parsley before serving.

Notes

This dish can be easily adapted to be vegetarian by using mushrooms or chickpeas. Store leftovers in an airtight container for up to 4 days in the refrigerator or freeze for up to 3 months.
