Ingredients
- 4 pieces boneless skinless chicken breasts or thighs
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 cup chicken broth (low-sodium recommended)
- 2 tablespoons honey
- 1 teaspoon paprika
- Salt and cracked black pepper, to taste
- 1 cup caramelized onions
- 1 cup shredded cheddar or Monterey Jack cheese (optional)
- 2 tablespoons dried parsley (for garnish)
- 1 teaspoon cayenne pepper or hot sauce
- 1/2 cup heavy cream
- 1 cup cherry tomatoes
- 1/2 cup kalamata olives
Instructions
- In a large skillet, heat the butter over medium heat until melted.
- Stir in the minced garlic and sauté until fragrant, about 1 minute.
- Season the chicken with salt, pepper, and paprika. Add it to the skillet and cook until golden brown on both sides.
- Pour in the chicken broth, honey, and heavy cream; bring everything to a simmer.
- Add the caramelized onions and cherry tomatoes, and let it cook for about 10-12 minutes until the chicken is done and the sauce begins to thicken.
- If desired, sprinkle in the shredded cheese and cayenne pepper or hot sauce, stirring to combine evenly.
- Finally, garnish with dried parsley before serving.
Notes
This dish can be easily adapted to be vegetarian by using mushrooms or chickpeas. Store leftovers in an airtight container for up to 4 days in the refrigerator or freeze for up to 3 months.
