A rich and buttery chicken skillet recipe that’s quick, easy, and perfect for weeknights.
Ingredients
- 4 boneless, skinless chicken breasts (about 1.5–2 pounds) or thighs
- 4 tablespoons butter, divided (2 Tbsp for searing, 2 Tbsp to finish)
- 4 cloves garlic, minced
- 1 cup chicken broth (low-sodium if preferred)
Instructions
- Pat the chicken dry and season both sides with salt and pepper.
- Heat a large skillet over medium heat. Add 2 tablespoons butter and let it melt until foaming.
- Add minced garlic and sauté about 30–60 seconds until fragrant.
- Place the chicken in the skillet. Sear until browned, about 5–7 minutes per side.
- Pour in 1 cup chicken broth and scrape any browned bits from the pan. Cover the skillet and reduce heat to low.
- Simmer gently for 15–20 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove the lid, stir in the remaining 2 tablespoons butter until melted and the sauce is glossy.
- Serve immediately, spooning sauce over the chicken.
Notes
Serve over mashed potatoes, rice, or steamed spinach for a complete meal. For extra flavor, finish with chopped parsley or chives.
