  • 4 tablespoons butter (or olive oil for a lighter option)
  • 4 cloves garlic, freshly minced
  • 1 cup low-sodium chicken broth
  • 2 tablespoons honey
  • 1 teaspoon paprika
  • Salt and cracked black pepper to taste
  • 1 cup caramelized onions
  • 1 cup shredded cheddar or Monterey Jack cheese (optional)
  • 2 tablespoons dried parsley for garnish
  • 1 teaspoon cayenne pepper or hot sauce (optional)
  • 1/2 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 1 cup kalamata olives

Instructions

  1. Heat the butter in a large skillet over medium heat until melted.
  2. Sauté the minced garlic for about 30 seconds until it’s fragrant.
  3. Season the chicken pieces with salt, black pepper, and paprika, then add them to the skillet. Cook for 5-6 minutes per side until the chicken is golden brown and cooked through.
  4. Carefully pour in the chicken broth, honey, and cream, stirring to combine. Allow the mixture to simmer for a few minutes until it thickens just slightly.
  5. Add the caramelized onions, cherry tomatoes, olives, and cayenne pepper or hot sauce. Cook for an additional 2-3 minutes.
  6. If desired, sprinkle cheese over the chicken and let it melt into the dish.
  7. Garnish with dried parsley before serving, and enjoy this dish over your choice of rice or mashed potatoes.

Notes
