Ingredients
- 2 cups cooked and shredded chicken (rotisserie chicken works great)
- 1 cup corn kernels (fresh or canned)
- 1 cup black beans, drained and rinsed
- 1/2 cup diced tomatoes
- 1/4 cup finely chopped onion
- 1/4 cup chopped fresh cilantro
- 1 cup mayonnaise
- 2 tablespoons taco seasoning
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked and shredded chicken, corn, black beans, diced tomatoes, chopped onion, and cilantro. Mix everything until well incorporated.
- In a separate small bowl, whisk together the mayonnaise, taco seasoning, and lime juice until you achieve a smooth and creamy dressing.
- Pour the dressing over the chicken mixture in the large bowl and stir until all ingredients are pleasantly coated.
- Taste your salad and adjust the seasoning with salt and pepper to your preference.
