A bright and flavorful chicken salad with a zesty Southwest flair, perfect for busy weeknights and great for meal prep.

  • 2 cups cooked and shredded chicken (rotisserie chicken works great)
  • 1 cup corn kernels (fresh or canned)
  • 1 cup black beans, drained and rinsed
  • 1/2 cup diced tomatoes
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped fresh cilantro
  • 1 cup mayonnaise
  • 2 tablespoons taco seasoning
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked and shredded chicken, corn, black beans, diced tomatoes, chopped onion, and cilantro. Mix everything until well incorporated.
  2. In a separate small bowl, whisk together the mayonnaise, taco seasoning, and lime juice until you achieve a smooth and creamy dressing.
  3. Pour the dressing over the chicken mixture in the large bowl and stir until all ingredients are pleasantly coated.
  4. Taste your salad and adjust the seasoning with salt and pepper to your preference.
