A comforting and heartwarming classic chicken noodle soup with tender chicken, vibrant veggies, and hearty egg noodles simmered in savory broth.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 8 ounces egg noodles
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, sliced carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Once boiling, add the shredded chicken, dried thyme, and parsley. Stir well.
  6. Toss in the egg noodles and cook until tender, around 7-10 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh herbs if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze without noodles.
