Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 8 ounces egg noodles
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, sliced carrots, and celery. Sauté until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and bring the mixture to a boil.
- Once boiling, add the shredded chicken, dried thyme, and parsley. Stir well.
- Toss in the egg noodles and cook until tender, around 7-10 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs if desired.
Notes
