A comforting and creamy casserole featuring rotisserie chicken, mixed vegetables, and a delicious cheesy topping.

  • 2 cups cooked rotisserie chicken, shredded
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup frozen mixed vegetables
  • 2 cups cooked noodles or rice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Breadcrumbs (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded rotisserie chicken, cream of chicken soup, sour cream, shredded cheese, frozen mixed vegetables, cooked noodles or rice, garlic powder, salt, and pepper.
  3. Stir until everything is well incorporated.
  4. Transfer the mixture to a greased casserole dish, spreading it evenly across the bottom.
  5. If desired, sprinkle breadcrumbs over the mixture.
  6. Bake in the preheated oven for 25-30 minutes, or until the casserole is hot, bubbly, and the top is golden brown.
  7. Let it cool slightly before serving to enhance the flavors.

Notes

For an extra creamy texture, consider adding a splash of chicken broth.
