A vibrant salad featuring grilled chicken and a medley of fresh veggies, drizzled with a smoky chipotle-lime dressing.

Ingredients

  • Grilled chicken breast (sliced)
  • Canned black beans (rinsed and drained)
  • Sweet corn (canned or fresh)
  • Fresh romaine lettuce (chopped)
  • Ripe avocado (diced)
  • Cherry tomatoes (halved)
  • Chipotle-lime dressing (store-bought or homemade)

Instructions

  1. Grill the chicken until fully done, about 7-8 minutes per side. Let it rest before slicing.
  2. In a large bowl, combine black beans, sweet corn, chopped romaine, diced avocado, and halved cherry tomatoes.
  3. Layer the sliced chicken on top of the veggie mix.
  4. Drizzle the chipotle-lime dressing over the salad and toss gently.
